Cocktail: Blood Orange Coconut Mojito

Ingredients: Lemon, lime, mint leaves, lime cordial, gomme syrup, white rum, blood orange syrup, coconut syrup and coconut milk.

Beluga is considered “church” by someone I know, a reference to its all-day Sunday specials.

The Blood Orange Coconut Mojito is a favourite of mine after a tasting session at the Green Point venue.

Mixologist Adam Bartal muddles lemon, lime and mint leaves with gomme syrup to get the flavours.

Lime cordial and white rum are added and it is topped with a mix of crushed ice and coconut milk. The drink is served in a tall beer glass.

It is creamy without being too thick to drink through a straw. The combination of coconut and citrus is what made this drink for me.

Bartal says an alcohol-free version is available, too, and it is often ordered as a pre-meal drink.

Beluga is a Caviar restaurant along with Sevruga at the Waterfront. Caviar marketing manager Tanya Horak describes Beluga as the young, trendy and sexy sister of Sevruga.

Beluga’s bar is a smoking one or you can puff outside in The Foundry courtyard, where there is seating. Beluga has large indoor space and outdoor seating facing Prestwich Street. It is open daily from noon.

Half-price specials run daily from noon to 7pm and all day on Sunday. Watch out for their frozen popsicle cocktails coming next month. Enjoy an apple martini or a blood orange coconut or regular mojito frozen at –40´ºC and served on dry ice. – Wendyl Martin
