Try this sugar/gluten free and vegan, muffin recipe today - because healthy eating has never tasted this delicious.
Ingredients:
- 2 cups Gluten Free Flour Mix, in Desserts
- 2 tbs baking powder
- 1 tbs pea flour, mixed with 2 tbs water
- 4 tbs extra virgin olive oil or stewed/mashed fruit
- 1 cup almond milk
Instructions:
- Mix dry ingredients
- Add 2 tsp cinnamon to sweeten, if its not a savoury muffin
- Mix other ingredients together and then add to dry ingredients (folding softly)
-Leave mixture slightly unmixed
Additional:
Add the (Below) combination of your choice, or create your own:
-mashed pumpkin or kumara
-berries & walnuts
-apple & cinnamon
-herbs & grated carrot or zuchinni
-apple & berry
-banana & walnut
-lemon and/or orange juice & poppy seeds
-seeds are nice too, though having them raw is more healthy!
