Its that time of the year when families are gearing up for the festive season.

One of the things on the agenda is finding the perfect dessert to accompany the Christmas feast you have planned.

Sticky toffee pudding is always a crowd favourite and the best part? Its easy and quick to make.

Enjoy!

Ingredients: Pudding

- 180g pitted dates and luxury fruit cake mix (combination of both)

- 180ml hot water

- 1 teaspoon bicarbonate of soda

- 60grams unsalted butter (softened)

- 150 grams dark brown muscovado sugar

- 15ml dark molasses

- 2 eggs

- 180 grams flour self-raising flour

Instructions: Pudding

1. Soak the fruit in the water with the bicarbonate of soda for about 15 minutes and blend until puree.

2. Cream the sugar and the butter the add the eggs one by one and whisk until fluffy

3. Sift in the flour and stir, but be careful not to over mix.

4. Add 100g dried fruit mix and fold through, spray a ring mold and bake in a 160 degree oven for about 45 minutes until cooked.

Ingredients: Sauce

- 100g muscovado sugar

Instructions: Sauce

1. Heat the sugar and the butter until melted and sugar dissolved the add the cream in one go.

2. Boil until the sauce thickens a little and pour over the pudding.

3. Decorate with more dried fruit if you like.

Serve hot or cold.
