GREEN BROCCOLI FISH-BAKE
Serves 4-6
125ml basmati rice
400g tin of Lifestyle Food coconut cream
350g broccoli, cut in florets
1 red onion, chopped
10ml green curry paste
1 red pepper, cubed
1 red chilli, deseeded and diced
2ml Lifestyle Food cayenne pepper
10ml fish sauce
grated zest and juice of 1 lime
500g hake fillets with the skin on, cut in cubes
5ml Lifestyle Food Himalayan salt
125ml chopped fresh coriander
125ml Panko breadcrumbs
Cook the rice in three cups of boiling salted water until tender, about 20 minutes. Drain and rinse.
Add together in a pot with the coconut cream, broccoli, red onion, curry paste, red pepper, chilli, cayenne pepper, fish sauce, lime zest and juice. Bring to the boil for 3 minutes. Add the fish and boil for a further minutes.
Season with salt and pepper.
Stir in the coriander and pour into an oven-proof dish.
Sprinkle over the breadcrumbs and bake at 180°C for 15 minutes until golden and bubbling.
