Delicious alternative for preparing spinach that is sure to leave you wanting more

Spinach is among the World's healthiest vegetables and is known for its nutrient richness.

This recipe however provides for a delicious alternative for preparing spinach that is sure to leave you wanting more.

Thanks to Jenny Kay this will become a weekly dinner side favourite.

Filling Ingredients:

- 8x250ml washed, chopped spinach

- 5ml salt

- 1 large onion, peeled and finely chopped

- black pepper

- ground allspice

- 60ml lemon juice

- 125ml toasted pine nuts (optional)

Filling Instructions:

1. Put the chopped spinach into a colander and sprinkle with salt, rub the salt into the spinach and set aside for 10 -15 minutes.

2. Squeeze as much juice out of the spinach as you can.

3. Combine the spinach, onion, seasoning, lemon juice and pine nuts if using.

4. Mix well.

Dough Ingredients:

- 4x250ml flour

- 5ml salt

- 10ml sugar

- 10g instant yeast

- 80ml olive oil

- 300/400ml warm water

Dough Instructions:

1. Combine the flour, salt, sugar and yeast in a bowl.

2. Add the olive oil and enough warm water to make a dough that is soft but not sticky.

3. Knead the dough well until smooth and elastic.

4. Place the dough into an oiled plastic bag and set aside to rise for 30-40 minutes.

5. Turn the dough out onto a floured surface and roll out to 3mm thickness.

6. Make sure the dough is not sticking to the surface by lifting it frequently and dusting with flour if necessary.

7. Cut out 10cm discs from the dough.

8. Place a generous tablespoon of filling in the middle of the circle.

9. Bring the edges of the dough together to enclose the filling and form a triangular shape.

10. Place on a greased baking tray and brush with olive oil.

11. Bake at 180°C for 20 minutes until pale golden brown.

12. Remove and allow to cool before serving at room temperature.
