Seeded tuna patties
Makes 10-12
2 medium potatoes, peeled and chopped
140g tin of Lifestyle Food tuna in brine, drained and flaked
4 spring onions, finely chopped
250ml cheddar cheese, grated
3ml Lifestyle Food Himalayan salt
3ml Lifestyle Food cayenne pepper
125ml chopped parsley
5ml grated lemon rind
250ml fresh breadcrumbs
15ml poppy seeds
125ml Lifestyle Food ultimate 4 seed mix
1 egg, beaten
Lifestyle Food coconut oil, for frying
Boil the potatoes until soft. Drain and mash.
Combine with the tuna, spring onion, cheese, salt, cayenne pepper, parsley and lemon rind and mix well.
Shape the mixture into patties and refrigerate for at least 30 minutes.
Combine the bread-crumbs, poppy seeds and seed mix. Dip the patties in the egg and then coat with the seeded breadcrumbs.
Fry in a little coconut oil until golden brown on both sides, then drain on paper towel.
