Serves 4

50g butter

1 red onion, finely diced

5ml chopped garlic

1 red chilli, seeded and finely chopped

15ml flour

330ml dry cider

2kg mussels, well cleaned

salt and pepper

60ml chopped parsley

In a large pot, melt the butter and gently fry the onion and garlic until soft.

Add the chilli and cook for a few seconds.

Stir in the flour and cook for a minute.

Stir in the cider and bring to the boil. Add the mussels and seasoning.

Cover with a lid and cook for 5 minutes, shaking the pot occasionally until the mussels have opened. Discard any unopened mussels.

Spoon into bowls with some of the cooking juices and scatter over the parsley.

Serve with soda bread.
