Recipe: Cheese fritatta
Serves 2
15g MOOI RIVER butter
4 courgettes, sliced
2 spring onions, sliced
50g ham, cubed
4 eggs
45ml CLOVER sour cream
45ml CLOVER milk
salt and pepper
150ml grated CLOVER cheddar cheese
100g CLOVER Tussers cheese, diced
75g CLOVER feta cheese, diced
Fresh herbs for garnishing
Heat a little pan on a medium-low heat, melt the butter and fry the courgettes until cooked, add the spring onion, cook another minute, then add the ham.
Meanwhile beat together the eggs, sour cream and milk and season with salt and pepper. Add the cheeses, then pour the egg mixture into the pan with the courgettes.
Cook, without stirring over a low heat for 10 minutes, and then cook under a heated grill for four to five minutes, until golden. Serve topped with a handful of fresh herbs.
