Recipe: Moist banana date loaf

500ml self-raising flour

125ml brown sugar

Date and banana loaf

250g dates, chopped

125g MOOI RIVER BUTTER, softened

300ml CLOVER MILK

2 eggs, beaten

3 large ripe bananas, mashed

Combine the flour, sugar and dates in a mixing bowl. Add the butter, milk, eggs and bananas and mix well.

Pour the mixture into a greased and base lined 23x13cm loaf pan and bake at 170°C for 50-60 minutes or until a skewer inserted into the cake comes out clean.

The mixture can also be baked in smaller loaf pans.

The baking time would reduce to 30-40 minutes.
