In the opening chapter of this book, Kyndra Holley says the theme of this book is comfort – that extends beyond recipes to the kitchen itself.

It was that word comfort that peeked my interest. Every time I’ve thought of embarking on a low-carb eating plan, the thought of substituting a dry cracker for a wholesome slice of bread had my eyes glazing over and me ready to run for the hills.

As I leafed through this book, I came across a recipe for “mac” and cheese, risotto, and some really cool snacks that do not consist of merely a lettuce leaf and cheese. Bacon and cauliflower are this author’s best friends and she offers a number of easy ways to make them taste a whole lot better.

It’s all about tricking the brain into believing you’re eating the carbs.

I can live with that.
