Punch will cool you down on hot summer days. Angela Day fills jugs with refreshing, colourful drinks.
PIMM’S PUNCH
Makes about a litre
1 small Mediterranean cucumber
1 small orange
1 small lemon
8-10 strawberries, washed
sprigs of mint
180ml Pimm’s
750ml lemonade
ice for serving
Using a potato peeler, slice the cucumber lengthwise into thin slices.
Cut the orange into slices and then halve each slice. Do the same to the lemon. Quarter the strawberries.
Put everything into a large jug together with the mint. Add the Pimm’s, lemonade and lots of ice.
Best made just before serving.
GINGER ALE AND WATERMELON PUNCH
Makes about 3 litres
1 small watermelon, sliced
1 litre chilled ginger ale
1 litre chilled pineapple juice
1 litre chilled sparkling water
250g blueberries
ice cubes
Use a star cutter to cut star shapes from the watermelon slices.
Place in a large punch bowl.
Add the ginger ale, pineapple juice, water and blueberries.
Add a generous amount of ice cubes and serve.
SUMMER BERRY PUNCH
Makes about 3 litres
250g strawberries
250g blueberries
250g raspberries
125g blackberries
1.5 litres of berry juice
250ml vodka
1.5 litres lemonade
ice cubes
Combine the berries, juices and vodka in a large jug or bowl and set aside for an hour for the flavours to develop.
When ready to serve, add the lemonade and ice.
ICED-TEA PUNCH
Makes about 2 litres
4 rooibos tea bags
1 litre of boiling water
50-60ml castor sugar
250ml apple juice
250ml pineapple juice
1 apple, cored and sliced into thin wedges
¼ pineapple, cut into thin wedges
sprigs of mint
ice to serve
Add the tea bags to the water and leave to infuse for 15 minutes.
Remove tea bags. Add sugar to taste.
Stir in the apple and pineapple juice as well as the fruit and mint.
Serve with lots of ice.
WHITE WINE PUNCH
Makes about 3 litres
250ml sugar
500ml water
125ml lemon juice
250ml orange juice
250ml strong tea
250ml white grape juice
125ml crushed pineapple
750ml fruity white wine
125ml granadilla pulp
1 litre of soda water
250g strawberries, sliced
mint leaves
1 lime, halved and sliced
ice for serving
Combine the sugar and water in a saucepan over a low heat until the sugar has dissolved. Bring to the boil and simmer for a minute.
Remove from heat and cool. Combine with the remaining ingredients and serve with plenty of ice.
