Christmas the whisky way - recipes

The traditional celebration of Christmas is largely observed by South Africans in the European way, with turkey, roast vegetables, gravy, eggnog and steaming hot Christmas pudding.

But we live in Africa. December is in the peak of our sweltering hot summer season, with the perfect climate for lighter, al fresco dining?

This Christmas, lets enjoy a proudly South African feast that won't leave us bloated and passed out on the couch after lunch.

The 'FNB Whisky Live Festival' team have conjured up some treats to adorn your table with this year. Oh, and don't forget the key ingredients….Whisky, 1 x braai and lots of SA hospitality!

Whisky Sizzlers steaks

Ingredients:

6x 250g sirloin steaks

1/2 cup whisky

1/2 cup brown sugar

1 /2 cup Worcestershire sauce

1/4 cup oil

3 tablespoons mustard

Combine all ingredients except the steaks. Mix well. Place steaks in a large re-sealable bag. Pour marinade over top. Seal and refrigerate for 4 hours. Gooi it on the coals and grill to perfection!

Whisky BBQ Prawns with Mayonnaise dip

Ingredients:

30 King Prawns

½ Cup of Whisky

½ Cup of BBQ Sauce

Bowl of Mayonnaise with a sprinkle of paprika and tot of whisky stirred through

Combine whisky, BBQ sauce, and honey in medium bowl. Make sure you stir ingredients well so they blend properly.

Add prawns to mixture and refrigerate for at least 30 minutes. This will allow the prawns to soak up the flavors, rather than just cover them.

Cover a Braai Grill with tinfoil. Place Prawns on the Braai for approximately 8 minutes, turning and basting continuously

Serve on a platter, with a whisky infused mayonnaise dip

Chicken Drams

Ingredients:

2 tsp. smoked paprika

2 tsp. garlic powder

1 tsp. dried thyme

1 tsp. cayenne pepper

1/2 tsp. Salt

8 chicken legs (drumsticks)

Mix together and rub the above into the chicken

¼ Cup Whisky

¼ Cup cider vinegar

2 Tbsp. prepared yellow mustard

2 Tbsp. Worcestershire sauce

1 tsp. red pepper flakes

Juice of 1 lime

Salt to taste

Reserve half the sauce for basting the chicken. Heat the remaining sauce in a small saucepan over medium, about 5 minutes. Set aside and reserve for dipping with chicken. Baste and Grill drumsticks for 10 minutes.

The above to be accompanied by a selection of Crisp Green Salads, Potato Salad, Pasta Salad, Bean Salad and fresh baked breads.

Chilled Eish Coffee (Our version of the Irish Coffee)

Ingredients:

1 ounce cognac

1 ounce whisky

1 ounce creme de cacao

2 ounces coffee

1 teaspoon superfine sugar

Glass Type: Martini glass

Instructions:

Stir well with cracked ice, then strain into a chilled cocktail glass and garnish with a twist of lemon peel
