WATERMELON, PRAWN AND FETA SALAD

Serves 4

500ml watermelon, cut into chunks

500g cooked prawn tails

200g feta, cubed

half a red onion, in thin wedges

125ml mint leaves

salt and pepper

rocket leaves for serving

DRESSING

30ml olive oil

15ml lemon juice

1 clove garlic crushed

15ml sweet chilli sauce

10ml honey

Combine the watermelon, prawns, feta, onion and mint in a bowl. Pour dressing over, toss gently to coat and season. Serve on a bed of rocket leaves.

DRESSING: Combine all ingredients and mix well.

WATERMELON SALSA

Serves 4

500ml finely chopped watermelon

half a cucumber, peeled, seeded and diced

half a red onion, finely chopped

half a red pepper, seeded and finely chopped

2-3 green chillies, seeded and chopped

60ml chopped coriander

25ml chopped basil

25ml chopped mint

30ml honey

15ml lime juice

In a large bowl, combine melon, cucumber, onion, pepper, chillies, and herbs. Drizzle with honey and lime juice, gently toss. Chill for at least an hour. Delicious with corn chips, chicken or fish.

WATERMELON SORBET

Serves 6-8

125ml castor sugar

250ml water

700g watermelon chunks

grated rind of 1 lime

60ml lime juice

2 egg whites, lightly whipped

Combine the sugar and water in a pot and stir over a low heat until the sugar has dissolved. Bring to the boil and simmer for 10 minutes.

Remove and cool completely.

Put the watermelon in a food processor and blend until smooth. Pour the mixture into a sieve and strain the juice into a bowl. Discard the pulp.

Add the cooled sugar mixture, lime rind and juice and mix well. Pour the mixture into shallow metal container and freeze until almost solid.

Transfer the mixture into the food processor and process. Add the egg whites and process until combined. Return to the freezer and freeze until solid.

WATERMELON AND CUCUMBER WINE PUNCH

Makes 1.5 litres

LEMONADE

250ml sugar

1 litre water

grated rind of

1 large lemon

250ml lemon juice

 Combine the sugar, water and lemon rind in a saucepan.

Heat until the sugar is dissolved.

Bring to the boil and boil for two minutes.

Remove from heat and stir in the lemon juice.

Chill well.

Store in the fridge.

PUNCH

500ml chardonnay white wine

18 watermelon chunks

1 small cucumber, julienned

500ml home-made lemonade

500ml soda water to taste

ice for serving

Mix ingredients. Stir in a few handfuls of ice. Serve.
