Pan-fried hake fillet with creamy potato and vegetable salad

Ingredients

200g hake fillet (thick part of the hake, not the tail part)

40g green beans

40g cherry tomatoes

40g baby onions

60g baby potatoes (boiled)

30g calamata olives (pitted)

60ml fresh cream

30ml lemon juice

1tsp dill (chopped)

1tbsp olive oil

Method:

In a hot pan grill the hake for 4 min on each side or until cooked. Remove from pan, add the onion, beans, tomatoes, potatoes and olives to the same pan and sauté for a further 5 min. Add the cream, lemon juice and dill and toss until well mixed. Serve in a deep soup plate, with the veg mix at the bottom and the hake on top and a drizzle of the sauce on the fish. - The Sunday Independent
