Courgette carpaccio

(Serves a crowd)

Peel long strips of yellow/green courgettes. Plate&dress w/=parts lemjuice/EVOO. Top w/shaved Parm, fresh basil, S&P

 

For the Tweetaphobes: 

Peel long strips of yellow and green courgettes. 

Plate and dress with equal parts lemon juice 

and extra virgin olive oil.  

Top with shaved parmesan, fresh basil and salt and pepper.

Red pepper soup

(Serves 4-6)

170g chop’d onion, 1t grlic. +800g tin toms, 5 rst’d red pepprs, 1L veg stock, S&P, simmr~25min. Purée. Top w/ornge zest

For the Tweetaphobes: 

170g chopped onion with 1 teaspoon chopped garlic. 

Add 800g tinned tomatoes, 5 roasted red peppers, 1 litre vegetable stock and salt and pepper. Simmer for about 25 minutes. 

Purée. 

Top with some orange zest and créme fraîche, if you wish.

Smoky beef skewers 

(Serves 4)

Mix 2T ea smkd paprika, lemzest, olv oil w/1 T ea grlic, dried mint. S&P. Rub in2 500g diced beef, marin8 ovrnight.Skewer&grill

 

For the Tweetaphobes: 

Mix 2 tablespoons each of smoked paprika, lemon zest and olive oil with 1 tablespoon each of finely-chopped garlic and dried mint. 

Season with salt and pepper. 

Rub into 500g diced beef and marinate overnight. 

Thread on to skewers and grill.
