Cheese-Free Cauliflower Roast

The cauliflower has been popping up in the repertoires of just about every TV chef and health-food blogger this year, with varying degrees of success. The classic method of smothering it in cheese and putting it in the oven remains a favourite, but if you’re after a lower-calorie but no less tasty version, try this recipe. It’s a simple, nutritious dish that makes a surprisingly satisfying supper. Serve with salad, yogurt and flatbreads.

Ingredients

1 medium whole cauliflower

1 tsp dried oregano

½ tsp hot smoked paprika

25g soft butter

Seasoning

Method

Pre-heat the oven to 215C.

Mix the butter, paprika, oregano and seasoning in a bowl.

Trim the cauliflower head, making sure it sits upright.

Rub the butter mixture over the whole cauliflower.

Take a big casserole dish with a lid, pour a little water at the bottom (about 50ml), then place the cauliflower in the dish and cover with the lid. Cook for about 45 minutes, remove the lid, and cook for another 15 minutes until soft and golden.
