Chickpea and Cauliflower Curry
CHICKPEA and CAULIFLOWER CURRY RECIPE
 
Ingredients:
  •  Small cauliflower head
  • 1 can of Chickpeas
  • 1 cup Coriander
  • 4 cloves Garlic
  • 1 can chopped tomato
  • 1 white onion
  • 1 can coconut milk
  • 2 tbsp red curry paste
  • 2 tbsp vegetable oil
  • Salt and Pepper
 
METHOD
 
  1. In a large skillet, heat the vegetable oil, add the white onion and fry until soft.
  2. Then add the curry paste and garlic, fry for about 1 min, then add tomato and fry for 1 min
  3. Add cauliflower, chickpeas and coconut milk, simmer for 10 min
  4. Set aside and add coriander, then serve
