This salad can be made with any number of vegetables and you can add in chicken or beef cube or even fish.
Mom's Couscous Salad (Serves 6 to 8)

This salad can be made with any number of vegetables and you can add in chicken or beef cube or even fish.

Ingredients
One cup couscous
Half a red onion
Half a cup baked or boiled butternut, chopped in cubes
Cup full of baked or boiled brinjal, chopped in cubes
Half a cup of baked or boiled beetroot, chopped in cubes
Cup full of baby tomatoes
Pumpkin Seeds (or seeds of your choice)
Raisins (optional)
Cashew Nuts, toasted
Bunch of coriander
Feta Cheese

For the Honey Mustard Dressing
1 tbsp Dijon Mustard
1 tbsp honey
1/2 cup olive oil
Balsamic vinegar
Salt and Pepper

Method
Measure out one cup Couscous and add to a big enough dish
Add in a cup of boiling water. You may need more just to cover the couscous and leave standing for 3 to five minutes
Start building your couscous once you fork it and loosen
Add the onions, the butternut, brinjal, beetroot 
Add the baby tomatoes
Add in what-ever seeds you may have we used pumpkin seeds
Add in some raisins if you have
Add in a handful of toasted cashews
Finally toss in load of coriander to bring out the taste
And top with Feta Cheese

For the dressing, simply mix all the ingredients together, and drizzling over the couscous.
