A hearty, low-calorie one-pan breakfast to wake you up and get your metabolism going.

Ingredients

  • 2 tbsp olive oil
  • 1 red onion, finely chopped
  • A handful of spinach
  • A pinch of salt
  • A pinch of ground pepper
  • A pinch of chili flakes
  • 300g boerewors
  • 100g mushrooms
  • 80g cherry tomatoes
  • 3 large eggs
  • A loaf of ciabatta bread

Method

  1. Heat up your stove and add olive oil to a non-stick pan.
  2. Add the finely chopped red onion and fry until tender.
  3. Roughly rip the spinach with your hands and add to the pan with the red onion and olive oil.
  4. Season with salt, pepper and chili flakes.
  5. Chop the boerewors into bite sizes and add to the pan. Fry for 2 to 3 minutes with the lid on.
  6. Slice the mushrooms and fry until tender. Don’t overcook.
  7. Once the boerewors is cooked, add a handful of cherry tomatoes and fry until soft.
  8. Add eggs and cook to your preference (if you prefer your eggs well done, cover your pan after adding them).
  9. Serve with toasted ciabatta bread.
