Ingredients
1 red pepper & 1 yellow pepper; cut into chunks
3 medium courgettes; sliced into thick coins
200 g asparagus; cut into chunks
1 garlic clove; peeled and chopped
Olive oil
Sea salt
Black pepper
400 g packet puff pastry
2–3 cups (300 g) brown & white Turducken meat; shredded
Parmesan cheese; shaved, for garnish
Method
Pre-heat the oven to 200 ºC.
Toss vegetables and garlic in a roasting tray, season and drizzle with olive oil. Roast for 20 min. Take out of the oven to cool.
Meanwhile, unroll the puff pastry and cut into 6 rectangles.
Arrange pastry rectangles onto a sheet of baking paper, and slide onto a baking tray.
Score a 1 cm border around each rectangle, and bake at 200 ºC for 10–15 min. until puffed up and golden brown.
Remove from the oven and lift out the middle square to make a cavity.
Fill the cavity with the Turducken meat and roasted veggies.
Top with shaved Parmesan.
Serve with a bowl of lemony mayo on the side.
