Cara Cara and Lime Marmalade (Makes 350ml)
Savour the vitamin-rich and sweet citrus flavour of Cara Cara oranges – exclusively available at Checkers – in a tasty marmalade. Technically, this should keep for a few weeks in the fridge. It probably won’t though; it’s simply too delicious to resist.
3 Cara Cara oranges
1 cup (250 ml) sugar
1 cup (250 ml) water
1 cinnamon stick
Zest Cara Cara oranges and limes, and place zest in a large bowl.
Peel and segment oranges and limes, and add to the bowl with zest.
Squeeze all the juice from the leftover flesh and peels, and add to the segments and zest.
Add sugar to the mixture and allow it to stand for 15 min.
Transfer mixture to pan, add water and cinnamon, and set over a low to medium heat. Stir until the sugar has completely dissolved.
Reduce heat to a simmer and allow to cook for about 30 min., or until mixture thickens, stirring occasionally.
Allow marmalade to cool down completely before removing the cinnamon stick and pouring into a sterilised jar.
