I recently tried out the new range of NuMe “Not So Naughty” chocolate and pecan nut mix for brownies and muffins gluten-free baking pre-mixes.

Being a busy working mom, I rarely have the time to bake for my 2 young children, so I was delighted when I read the instructions:
What I loved is the simplicity of the preparation:
Mix together:
- 3 eggs
- ½ cup of Coconut oil
- 1 tsp Vanilla Essence
Simply add to the pre-mix, stir and spoon into a muffin tray or small dish.
Bake for 15 minutes and voilà! - I had a batch of super-healthy, homemade treats for my family.
Tip:
Don’t leave them in the oven for too long as they will dry out.
My young daughters loved them and I was happy to be able to pack something healthy in their lunchboxes.
Both the muffins and the chocolate chunks were moist, nutty in flavour, rich, yet not too sweet.
The pre-blend consists of ground pecan nuts, sunflower flour, cocoa, sugar-free chocolate and xylitol - making it a tasty low-carb gluten-free treat that is high in protein and dietary fibre.
The brownies can be served with cream and melted dark chocolate, while the muffins can be iced and decorated or simply dribbled with dark chocolate.
