Ingredients

700 grams of tenderized steak 

1 onion finely chopped 

2 tablespoons of cooking oil

1 teaspoon of salt 

1 teaspoon of turmeric 

2 tablespoons of roasted masala

1 teaspoon of paprika 

4 tablespoons of garlic and Ginger . 

1 tablespoon of vinegar 

1 teaspoon of sugar

2 bay leaves

Method 

Heat your oil and fry onions first until golden brown add the steak and cook on a medium heat for 10 minutes. 

Add the rest of your ingredients and Braise / cook slowly on a gentle heat for 45 - 50 minutes. 

Stirring occasionally and adding only 3 tablespoons of water at a time. 

Low to medium heat is key to a tender steak.

Next deep fry some chips, you will need about 6 -8 large potatoes - fry in 2 batches, place first batch of fried chips in warm oven to keep it hot. When all the chips are fried, sprinkle with some salt, sauce is 1/4 cup of vinegar warmed in a small pan with a little chili powder and paprika / drizzle this over the chips .

Next get your long bread loaf ready, cutting it sideways / layer with tomato, onion and lettuce, next add all the chips, pressing it a bit down, next the masala steak and some freshly chopped coriander.

The next step is very important: 

Wrap your Gatsby in a big piece of foil or strong white paper very tightly and allow to rest for 5 minutes. 

This process is what gives the Gatsby it's depth of flavour / the wrapping forces all the flavours to mingle.
