This super yummy choc-coconut mousse is high in protein, sugar-free, banting friendly and completely delicious! 

This is an ideal treat to satisfy your sweet tooth when you feel a craving coming along. I absolutely love this dessert – it is so easy to make and contains clean, healthy, wholesome ingredients. When I develop my recipes, I always think about how the final product is going to nourish the body. 

This choc-coconut mousse is rich in healthy fats which keeps blood sugar levels nice and stable, promotes glowing skin and leaves you feeling completely satisfied. Oh and totally Valentines Day approved too!

Vegan Choc-Coconut Protein Mousse

(Serves 2-4)

Prep Time: 10mins

Ingredients

400ml can coconut cream (preferably organic)

½ ripe avocado 

4 tbsp. raw cacao powder

1 tbsp.  xylitol

1 tbsp. vegan protein powder (I recommend Lifematrix brown rice protein powder; available at most health stores)

¼ tsp cinnamon

1 tsp. vanilla extract

Toppings:

1 tbsp cacao nibs

3 fresh strawberries (sliced)

Method

Place all ingredients in a food processor and blend for 3-4 minutes until well combined. Mixture should thicken gradually.  

Pour mixture into 4 small wine glasses or dessert bowls. 

Top with raw cacao nibs and sliced strawberries. 

Chill in the fridge for at least 3 hours, or until firm. 

Serve chilled.
