2 overripe bananas, mashed
½ cup vegetable oil
2 large eggs
¾ cup brown sugar
1 tsp bicarbonate of soda
½ tsp cinnamon powder
1 tsp vanilla essence
1 ½ cups self raising flour
Mix all the wet ingredients together.
Add the dry ingredients until just combined.
Line a muffin tray with muffin cases.
Divide the mixture evenly between the muffins cases.
Bake in a preheated oven at 170 degrees celsius for 20 minutes or until done.
