IF YOU didn't know what to do with those leftover veggies from your festive dinner party, then now you know that this fritata is the answer!

Ingredients

1 tbsp olive oil

1 onion, thinly sliced

1 garlic clove, crushed

baby potatoes chopped for roast vegetables

carrots chopped for roast vegetables

pumpkin chopped for roast vegetables

Method

Preheat grill to high. Heat oil in a 20 cm non-stick frying pan over medium heat. 

Add onion and garlic and fry for 3–4 minutes or until softened. Add vegetables and stir to combine. 

Cook, stirring often, for 2–3 minutes or until all the vegetables are heated through. Remove from heat. 

Whisk eggs and cream together in a bowl. 

Add cheese and parsley. Season with salt and pepper. Return pan to heat. 

Pour in egg mixture, covering the vegetables, and cook for 8 minutes or until base is set. 

Transfer to the grill for 5 minutes or until puffed and golden. 

Cut into squares and serve.
