Beans Bunny Chow

Ingredients

For the Curry

Beans

Oil

Chopped onion

Curry leaves

Chillies (red or green, depending on your preferred level of spiciness- OPTIONAL)

Mustard seeds

Ginger

Garlic

Spice medley of choice (we used, Chilli Powder, Garam Masala, Dhania Powder and Ground Jeera)

Tomatoes

Salt

Loaf of unsliced bread

Coriander 

Method

Boil the beans in a pressure cooker for about 30 to 45 minutes

In a pot big enough to make the amount of beans you want add in oil

Add in onion and let it fry/cook till lightly brown

Add in curry leaves

Add in Green and Red Chillies if you like your bunny spicy and hot

Add in a sprinkle of Mustard seeds to pop in the oil

Add in Ginger and garlic and spices which should include depending on how spicy you like it:

Grate tomatoes and add to the spicy mixture

Once the gravy is nicely cooked add in the boiled beans all at once with the saucy water which you should not throw away

Cover with a cup of boiling water and leave to cook for about 30 minutes until gravy is fully cooked and spicy

To Assemble

Cut four big chunks of the bread 

Remover the soft middle bread from the centre 

Add in the bean's curry

Use the bread to close and garnish with coriander
