The humble cucumber is being celebrated today.

Many will only slice up a cucumber as an extra veg for a salad, but it can also be the star of the show.

In drinks, cocktails and coolers, cucumbers can also be more than just a garnish. They are great additions to your drinks because the cucumber will soak up all the liquid it's drenched in and then at the end of your drink when you nibble on the cucumber you get an extra drink of flavour.

Honeydew, Cucumber and Mint Cooler recipe by Jenni Jackson

  • 1 honeydew melon (about 4 pounds), peeled and chopped
  • 1 English cucumber, ½ chopped and ½ thinly sliced
  • 1 cup fresh mint leaves
  • ½ cup fresh lime juice (from about 8 limes), plus 1 lime, thinly sliced, for serving splash of gin (optional)
  1. Puree the melon, chopped cucumber, and mint in a blender until smooth.
  2. Strain through a fine-mesh sieve into a large pitcher.
  3. Add the lime juice and sliced cucumber. Chill for 30 minutes or up to 12 hours.
  4. Stir well before serving.
  5. Serve over ice, garnished with lime slices.
  6. Add a splash of gin, if desired.
