#TheFlyingCook: How to make Cauliflower and Chicken Salad

Low carbs is the way to go as we start working on our healthy summer body.

Why not try this easy meal for busy people on the go who are also looking to be healthier.

This fuss-free dish is ideal as a side dish or even as a main which can be enjoyed as a snack, lunch or dinner.

It also does not require much ingredients  and is full of healthy, nutritious food items.

½ cup roasted butternut

½ cup baby spinach

2 roasted chicken breasts cut into bite size pieces

2 cups grated cauliflower

¼ cup Parmesan cheese sliced

1 cup cheese sauce

1 tsp mustard

1 tsp honey

1 tsp black pepper

salt to taste


Place the cauliflower in a glass bowl.

Then layer spinach, butternut, chicken, cheese and cheese sauce.

Cover bowl with a lid, place in a microwave and cook for 2½ minutes.

Stir and serve hot.
