The Great South African bake off is back and this time around the amateur bakers are ready to show the nation what incredible bakers they are.
Below is a recipe from participant Penny Rider sure to provide inspiration and delicious fun in the kitchen.
Ingredients: Cake
- 175g butter, cut into cubes
- 175g castor sugar
- 225g cake flour, sifted
- 3 eggs
- 3tsp milk
- 30g pistachio nuts, chopped
- 2tsp lemon zest, grated
- 1tsp baking powder

Ingredients: Glaze
- 80g icing sugar, sifted
-1tsp lemon juice
- 0,25tsp rose water
- 2tsp milk
- pink food colouring
Ingredients: Decoration
- 10g pistachio nuts (chopped)
- dried rose petals (optional)

Instructions: Cake
1. Measure the butter and sugar into a large bowl.
2. Beat together until mixture is creamy.
3. Add eggs (one at a time) beating well after each egg.
4. Sift flour and baking powder into the bowl and then add the wet ingredients.
5. Stir with a spoon until well combined.
6. Spoon mixture into a greased & lined loaf tin.
7. Level the top & bake at 180°C for 20 minutes.
8. Reduce the oven temperature to 165°C and bake for a further 35-40 minutes.
Instructions: Glaze
1. Mix glaze ingredients to a smooth paste.
2. Add colouring as desired.
3. Spread over cooled bake.
4. Sprinkle with pistachio and rose petals.
Makes a loaf.
