Honey Muffins

Makes 12

750ml flour

15ml baking powder

5ml Lifestyle Food fine sea salt

80g butter, softened

100ml buttermilk

100ml Lifestyle Food rice milk

1 egg

FILLING

60g butter, softened

80ml runny honey

250ml Lifestyle Food honey and almond Granola crunch

extra honey for drizzling

Place the flour, baking powder and salt in a bowl. Rub in the butter.

Combine the buttermilk, rice milk and egg and mix well. Add to the dry ingredients to form a stiff dough. Turn on to a floured surface and knead gently until smooth.

Roll out into a rectangle 40x20cm. Spread with butter, then honey and sprinkle over the Granola crunch. Roll up the dough like a Swiss roll and cut into 3cm-thick slices. Place into well-greased muffin cups and bake at 200degC for 20 minutes.

Remove from the pan and drizzle each muffin with some extra honey while warm.
