Instructions:

1.

Preheat the oven to 200C and brush two baking trays with oil.

2.

Place the flour, sugar, butter, salt and cinnamon in the bowl of a food processor and whiz to a crumb-like consistency.

3.

Add the egg yolk and bring the dough together into a ball.

4.

Wrap it in cling wrap and chill for 1 hour.

5.

Knead the dough until it is pliable.

6.

On a lightly floured work surface, roll it out to a thickness of about 3mm.

7.

Cut out biscuits using 7cm cutters (or gingerbread shapes), rolling the dough out twice to get around 20 biscuits.

8.

If planning to hang them as decorations, make a hole in each one with a skewer.

9.

Lay the biscuits 1cm apart on baking trays and bake for 9-12 minutes until lightly coloured.

10.

The lower tray may take longer than the top.

11.

Remove the trays from the oven and leave the biscuits to cool for a couple of minutes.

12.

The holes may have closed up slightly in the oven, so use the skewer again to open them as necessary.

13.

Loosen the biscuits with a palette knife and leave to cool completely.

14.

Decorate the biscuits as desired with writing icing and leave to set.

15.

The biscuits will keep well in a covered container for several days.
