In an effort to conserve water and protect our biodiversity, a new initiative was launched at Wits University.
The #GreenMondayMovement is a global health programme directed to provide universities with alternative, healthy meals that are meat, dairy and egg-free. The global initiative is headed by Humane Society International-Green Monday South Africa (HSI-SA).
According to the Humane Society International (which is one of the world’s largest animal protection organization), the Green Monday program encourages people to make a positive difference to their health and the environment by swapping meat, dairy and eggs for entirely plant-based meals at least one day a week.
African peanut and spinach stew
Ingredients
1 onion, chopped
1 teaspoon garlic, crushed
2 bunches of spinach, cored
1 cup vegetable stock
6 tablespoons peanut butter
1 teaspoon fresh ginger, grated
1 can butter beans, drained (or any kind of cooked beans)
Chilli (optional)
Oil for frying
Method
Sauté chopped onions and garlic in a bit of water/oil until translucent.
Add spinach and sauté until soft. Add salt and pepper to taste.
Make the sauce: Whisk together the vegetable stock, peanut butter and ginger in a bowl until well combined.
Add the sauce and the can of beans to the onion and spinach and mix well. Cook over low heat for 5 – 7 minutes.
Taste and add salt & pepper if needed.
Serve with cooked rice.
