French-fried toasted steak sandwich with sirloin, onion, mushroom, tomato, chilli on baby rocket, and topped with Emmental cheese

French Toast

Ingredients

2 slices of brown bread

2 eggs – beaten

salt & pepper

Method

Dip the two slices of bread in egg and pan-fry until lightly golden brown on each side.

Reserve to make up the sandwich later.

Filling

Ingredients

2 x 100g slices of sirloin steak

60g sliced button mushroom

5 cherry tomatoes – cut in half

1/2 an onion – sliced

1/2 a chilli – chopped finely

2 slices of Emmenthal cheese

salt and pepper

olive oil

baby rocket leaves

Method

Season the two slices of sirloin and grill until medium rare (to your liking) and leave to rest for 4 minutes.

Heat a pan on the stove, add oil and sauté the onions and mushroom for 4 minutes. Add the chilli and tomato, season with salt and pepper and cook for a further 4 minutes.

Assemble the sandwich

On the French fried bread start with the rocket, then the steak and on top of it the onion, mushroom, chilli and tomato and top with the cheese and cover with second slice of toasted bread.

Cut into 4 wedges and serve with thick, hand-cut potato chips. - Sunday Independent
