How to make a malva pudding

Get-togethers are big in a small town. And, by that, I mean huge everyone-gets-together get-togethers.

And malva pudding, served with jugs of custard and tubs of vanilla ice cream, would always be the main attraction.

Preheat the oven to 180°C. Mix all the pudding ingredients and pour the batter into a 23cm oven-to-table dish. Bake for 40 minutes or until dark brown. In the meantime, heat the syrup ingredients and simmer for about 10 minutes. Pour over the pudding as soon as it comes out of the oven.

1 cup cake wheat flour

1 tsp bicarbonate of soda

1 tsp apricot jam

1 tbs butter

1 cup milk

1 egg

1 cup sugar

1 tsp lemon juice

Syrup

1 cup pouring cream

½ cup butter

1 cup sugar

½ cup boiling water

Method

Pour over the pudding as soon as it comes out of the oven. Serves 6-8.
