There is nothing worse than coming home to a bunch of hungry people after a long day of hard work.

Not only are you too tired to cook, but you yourself are starving!

Fast food is not always an option - fried chicken, hamburgers and deep fried chips are not healthy on a regular basis and for some of us it’s simply too costly.

And then the kids expect you to magically make a delicious hot meal appear, while everything is still

frozen.

In my mother’s house, you had to wait, silently, while she finished cooking at night, otherwise you had to remain hidden until you were called.

By that time you already died from the trauma of waiting an hour to eat. 

This week, I went looking for things that take less than an hour to prepare, especially for those working moms, or when you have impatient hungry kids to feed.

Who said the best meals take too much time? These pasta meals are delicious, simple and not expensive.

All these ingredients can be found right inside your kitchen..

Tuna Pasta Bake

500g rigatoni pasta 

50g butter

50g plain flour

500ml milk

250g cheddar, grated

2 x 160g cans tuna steak in water, drained

330g can sweetcorn, drained

large handful chopped parsley

Method

Heat oven to 180 degrees. Boil the pasta for 2 mins less time than stated on the pack. To make the sauce, melt the butter in a saucepan and stir in the flour. Cook for 1 min, then gradually stir in the milk to make a thick white sauce. Remove from the heat and stir in all but a handful of cheese.

Drain the pasta, mix with the white sauce, tuna, sweetcorn and parsley, then season. Transfer to a baking dish and top with the rest of the grated cheese. Bake for 15-20 mins until the cheese on top is golden and starting to brown.
