Recipe: Cape Caprese Salad

Ingredients

350 g mixed cherry tomatoes

7 tbsp extra-virgin olive oil

Cape Foods Himalayan Pink Salt with Herbs

900 g mixed medium and large tomatoes

240 g undrained buffalo mozzarella

Freshly ground black pepper

Basil leaves

Toasted ciabatta 

Method

To start your salad cut the cherry tomatoes into halves and cut the medium and larger sized tomatoes into thin slices.

Toss cherry tomatoes with 1 tablespoon of olive oil and season to taste with Cape Foods Himalayan Pink Salt with Herbs. 

Arrange the tomato slices so that they cover a large plate or platter. 

Sprinkle lightly with CAPE FOODS Himalayan Pink Salt with Herbs.  

Spoon cherry tomatoes over the salad and drizzle with 6 tablespoons olive oil, season with ground pepper.  

Allow salad to stand for 30 to 45 min before serving. Finish with torn basil leaves and additional seasoning or olive oil, if required. 

Serve accompanied by slices of toasted ciabatta.
