Bubbles paired with heavenly apple dessert

MY twitter timeline has been flooded with tweets of people having fun at the Bubble festival in Sandton this past weekend. Well, I didn’t feel like I was missing out as I was also attending a Bubbles and Braai event at Grande Roche.

The braai was cooked to perfection by executive chef Roland Gorgosilich, and his team paired each course with Méthode Cap Classique from the farms Kumkani, Bon Courage and Rhebokskloof. What stood out for me were the apple cakes made by chef Ilana Smith.

The cake is not too sweet or maybe my judgment was impaired by the time I tasted it, but it paired well with the bubbly. The recipe seems long, but one can serve the cake with ready-made custard. The recipe is also perfect for children to prepare. They would enjoy making the batter.
